my sister in law and neice came over to hang out (obviously they only want to see my son lol) but they brought some pizzas with them :)

Last Saturday afternoon, my husband and I hosted a gathering for twelve people total. With cleaning the house, mowing the lawn, and shining up the girls for presentation :doh: (we don't really shine them up, but the nine year old is dusty and sweaty sometime :lol: ), we didn't have a lot of time to plan dinner, so we went for our fall back dinner, BBQ chicken wings, grilled corn, and pasta salad (Suddenly Pasta Salad out of the box). Husband fired up the grill; I made the pasta salad, and everyone was happy. I wish every organization of a meal was as easy.

Once upon a time I was meal planning. Approximately 2 weeks advance. It helps a lot to already know what you're going to make and have the groceries on hand. It takes a bit of time to organize and plan it all but it saves time on the actual night. Lately things have been so hectic around here that I can't even think about what to make that night, let alone plan for 2 weeks. *sigh* We've been eating a lot of veggies hot dogs and pizza. I need to go for a run tomorrow morning.

thanks for that link Eng! Once I get back from vacay, I need to prolly utilize that. Need to stick to strict diet ha ha!

Tonight I was gonna fix Caribbean jerk chicken nachos (recipe courtesy of Pampered Chef). But, friend and I decided to go have mexican instead! Now I feel like a turkey on thanksgiving...STUFFED!

My little brother and I went over to our sister's. She made a chicken/rice/broccoli/ cassarole thing. Very tastey and very filling. If I wasn't so sore and sleeepy I could have enjoyed it. I needs mah bed.

well at least you got the veggies in there!! We've just been eating pizza and chicken nuggets. I can' never think of what to make for dinner....

Pork and Sausage Jambalaya and potato salad.

I ate baked chicken and veggies...trying to watch what I am eating, I'd rather the Jambalaya :shifty: .

yesterday - pan fried steak and mushrooms with a mushroom risotto (from a mix). Yummo!

Re: Meal Planning - I am a huge fan of Meal Assembly. I opened a meal assembly franchise called Super Suppers (which I sold a couple of years later because it was too much fricken work!), but I did it because this method of meal prep totally changed my nightly dinner dread.

Nowadays, I do meal assembly every other month or so, and inbetween I buy a mess-load of meats and make my own. (different Marinades, baked dishes in foil pans, and ground beef for tacos, etc.) I make a label for each that I can put on my calender, so that I know how many I have left, etc. It's about 2-3 hours of work for 15 meals or so - but not having to dream up something each night is a lifesaver. (I'm also making meals for 6, so time is definately less if you cook for fewer). Check out the meal assembly in your area if you are interested- I have a ton of suggestions regarding how to stretch the ones you buy from there too...i

Of course, we still have Hot Dog Thursday. And re: beans for breakfast, I guess it's pretty common in the UK. My nephew has them every morning there.
